During your holidays, we offer the chance to discover the secrets of the Tuscan gastronomy in our cooking lessons, while enjoying the genuine traditions of Tuscany. What better way to become acquainted with and appreciate the strong and distinctive tastes and the enveloping and heady scents of this country ?
In our courses managed by professional chiefs you can taste typical Italian recipes and Tuscan specialties along with selected Tuscan wines. We have dishes which possess pure, authentic flavors and genuine products: a cooking that does not take away from the deeper inroads into the hinterland with its farms, typical crops, and products from hunting and the local forest. Imagine the flavor of olive oil, the fragrance of bread, the fragrant soup together with the meat, mixed together with many wines.
No matter if you are beginner or an expert in cooking, we welcome anyone who wants to take part in our Tuscan Cooking Course. We introduce you to simple but refined recipes and the sage traditions of true Tuscan rustic cooking; a unique experience, that you may indulge your senses in a charming area of Versilia, near to the sea, the mountains and surrounded by the ambience of millenary culture.
Pasta in Tuscan Cookery
The first day in the kitchen will be dedicated to the most famous dish of the Italian table and Tuscany in particular, home made pasta, such as tagliatelle, tagliolini, gnocchi, tordelli with seasonal fillings, bigoli, pici and pappardelle.
The dishes, prepared yourselves with the assistance of an expert, can be tasted after the course, accompanied with a suitable wine in accordance with the dish.
Peasant Soups and Sauces: Specialities from Tuscany
The second day is dedicated to fabulous peasant soups, flavoured with the wonderful extra virgin oil made from Tuscan olives, a real local source of goodness. Soups will be prepared with mushrooms and Mediterranean vegetables, various types of beans and the tasty Acqua Cotta.
Moreover, you will prepare several sauces seasoned with wild boar and seasonal vegetables and the ragu, in order to adequately flavour the various types of pasta. And last but not least, as an appetizer, you'll prepare Tuscan crostini and bruschetta with garlic and cherry tomatoes, donzelle and more.
Desserts of Traditional Tuscan Cookery
The last day of the cookery course will be dedicated to the preparation of the more typical sweets of the Tuscan tradition, such as panna cotta with fruits of the forest, cantuccini to accompany the Vin Santo liquor, castagnaccio and the other small sweet treats, whose secrets will be revealed to you once here.
