The duration of the course is 6 hours (in one day), with the preparation of lunch, followed by the degustation.
Exemple of menu with main courses
- Potato gnocchi with shrimp and fresh tomato sauce
- Potato gnocchi from "faro" grain from Garfagnana, with sauce of mussels
- Ravioli di ricotta with butter and sage
- Mugellana Tortelli with Parmesan cream
- Preparation of fresh pasta: tagliolini and tagliatelle with shrimp and seasonal vegetables, pappardelle with ragu of sausage and cannellini beans.
